I want to train emails that have been filtered into Junk as good, but there is no way to do that. Cmd-S and Cmd-G don’t work and there is no menu entry for the commands.

Due to changes in macOS Sonoma, the Apple Mail training commands are now in the SpamSieve menu bar icon and in the Dock icon:
